  • 10 oz whole strawberries, leaves removed (about 16 medium strawberries)
  • 133 grams granulated sweetener (2/3 cup)
  • 1 tsp vanilla extract
  • 118 ml HOT water (1/2 cup)
  • 1/4 oz gelatin powder (2 1/2 tsp)
  • 16 oz room temperature cream cheese softened
  • 123 grams Greek yogurt (1/2 cup)
  • 1/2 tsp gelatin powder
  • 1 9 inch no bake pie crust


  • Lightly grease a 9 inch springform pan with cooking spray. Make the no bake crust according to directions. Place the crust in the refrigerator until ready to use. Place the strawberries, sweetener and vanilla into a large food processor. Process for about 30 seconds or until completely pureed. Set aside.
  • Comine the HOT water and 2 1/2 tsp of the gelatin powder in a small bowl. Use a fork and stir for about 30 seconds or until the gelatin powder is fully dissolved. Pour gelatin mixture into a the bowl of a standing mixer. Add the cream cheese. Beat on low a few seconds to break up the cream cheese.
  • Increase speed to medium and beat 1 to 2 minutes or until completely smooth. Add the yogurt and beat on medium another minute until fluffy. Add the strawberries and the remaining 1/2 tsp of the gelatin powder. Beat on medium another minute until creamy.
  • Stop and scrape down the sides of the bowl as needed. Remove the crust from the refrigerator. Spread the filling evenly throughout the crust. Place in the refrigerator for 6 hours to overnight until firm. (overnight will give you the best texture)
  • Once the cheesecake is firm remove it from the refrigerator and slice to serve immediately. Only remove the cheesecake when you are ready to serve it, or it will get soft.
