Ingredients
- 1/2 cup coconut flour
- 1/2 tsp salt
- 1/2 tsp xanthan gum
- 1 TBS baking powder
- 1 1/2 TBS monkfruit sweetener, optional if wanting a sweet bagel
- 1 TBS dry spices or herbs of choice, optional
- 5 large eggs, room temperature
- 1/3 cup oil or melted butter
Instructions
- Preheat oven to 400 degrees. Lightly spray a 6 cup doughnut pan with cooking spray. Set aside
- In a large mixer bowl whisk together the coconut flour, salt, xanthan gum, baking powder, sweetener (if using), and dried spices or herbs (if using) until fully combined and no lumps are in the flour
- Add the eggs. Beat on low about 10 seconds or just until the dry ingredients are moist. Increase speed to medium. Beat on medium about 30 seconds or until fully combined
- Scrape down the sides of the bowl if needed. Add the oil. Beat again on medium for another 30 seconds or until fully combined and smooth
- Scrape down the sides of the bowl and push all ingredients to the center of the bowl.
- Divide the batter equally among the greased doughnut cavities. (about 4 TBS per doughnut cavity. Use a knife and even out the batter throughout the entire doughnut cavity. Make sure the batter is even all the way around
- Place silicone pan on to a baking sheet (optional: helps to keep the pan stable when removing from the oven) Place the pan into the preheated oven. Bake at 400 degrees for about 15 minutes or until golden and a tester comes out clean
- Remove from the oven. They will be soft but will firm up as they cool. Allow to cool in the pan about 15 minutes or until firm enough to remove without falling apart
- Transfer to a wire rack and allow to cool completely before slicing

This recipe yields about 6 bagels

- 1 cup hot coffee or espresso
- 1/4 cup milk of choice
- 2 TBS keto chocolate syrup or melted keto chocolate chips
- 1 TBS coconut oil
- 7 drops liquid stevia or 2 TBS monkfruit sweetener
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon, optional
Instructions
- Place all ingredients in a blender. Blend on high for about 30 seconds or until frothy. Pour into desired size mug. Top with whipped cream or chocolate syrup
