LOW CARB HAWAIIAN PIZZA

My husband and son love pizza but my husband is diabetic. As a result my husband has to pretty much stay clear of pizza. Until now, I have found a delicious recipe for low carb pizza. This recipe is not only delicious but it is easy and quick

Another thing I love about this recipe is it is very versatile. The topping and low carb flours can be change to anything you want. This recipe can also be made gluten free by substituting the vital wheat gluten for more almond flour and 3 teaspoons of xanthan gum. However, if you leave out the gluten the texture will change slightly and there will not be much rise to the dough.

Ingredients

  • 1 cup almond flour
  • 1 cup vital wheat gluten
  • 1 cup oat flour
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 2 TBS instant yeast
  • 1/4 cup shredded Parmesan cheese
  • 1 cup warm water
  • 1 large room temperature egg
  • 3 TBS honey
  • 3 TBS oil

Topping

  • 1 cup pizza sauce
  • 1-2 cup shredded mozzarella cheese
  • 1 cup chopped ham or Canadian bacon
  • 8 oz pineapple tidbits

Instructions

  • Preheat oven to 400 degrees. Line a 12 inch pizza pan with parchment paper
  • In a medium mixing bowl whisk together almond flour, vital wheat gluten, oat flour, salt, garlic powder, onion powder, dry oregano, and instant yeast
  • Add shredded Parmesan cheese and whisk until the cheese is fully distributed
  • In large mixer bowl add warm water, egg, honey and oil. Add dry ingredients to wet ingredients.
  • Beat on low for 30 seconds or until all dry ingredients are wet. Change out to dough hook attachment. Beat on medium/high for 3 minutes
  • Scrape down the sides of the bowl and beat on medium/high 3 more minutes.
  • Press dough evenly into prepared pizza pan. Cover with sprayed plastic wrap and let rise in a warm draft free area for 20 minutes
  • Uncover and bake for 10 minutes or until lightly golden
  • Top crust with sauce, mozzarella cheese, ham and pineapple and bake 8-10 minutes more or until cheese is melted

Quick Pizza Sauce

Ingredients

  • 15 oz tomato sauce
  • 8 oz tomato paste
  • 1/2 tsp garlic powder
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  • 1/2 tsp onion powder
  • seasoned salt, to taste
  • seasoned pepper to taste

Instructions

  • Whisk all ingredients together in a small bowl until smooth. Spread on top of pizza crust
