Low Carb Sugar Free Sweet And Sour Meatballs

Ingredients

  • 1 lb ground beef or turkey
  • 1/4 tsp seasoned pepper
  • 1 tsp seasoned salt
  • 1 tsp onion powder
  • 1/2 tsp Worcestershire sauce
  • 1/2 cup almond meal or dry low carb bread crumbs
  • 1 large room temperature egg
  • 1/4 cup milk

Sugar Free Sweet And Sour Sauce

  • 1 cup soy sauce
  • 1 tsp liquid stevia, or desired amount
  • 1/8 cup pure maple, or desired amount
  • 3/4 cup molasses, or desired amount
  • 1 tsp ground ginger
  • 2 garlic cloves. minced
  • 1/2 cup tomato sauce
  • 1/4 cup cider vinegar
  • 1 TBS Worcestershire sauce
  • 1/4 tsp cayenne pepper, optional
  • 1 tsp ground mustard
  • 1/4 onion, finely chopped
  • 1/2 red bell pepper, chopped

Instructions

  • Preheat oven to 400 degrees. Line a large baking sheet with foil and lightly spray with cooking spray
  • Place ground beef in a large mixing bowl. Using a wooden spoon chop the meat into small chunks
  • Add pepper, salt, and minced onion. Stir to fully combine
  • Add Worcestershire sauce, egg and milk. Stir until the meat mixture is slightly creamy
  • Add almond meal or breadcrumbs. Stir until the breadcrumbs are fully distributed throughout the mixture
  • Scoop meat mixture 1TBS at a time onto the prepared baking sheet. Roll each scoop into a tight ball and bake 10 minutes or until lightly brown

FOR THE SAUCE

  • Place all ingredients in a 12 inch skillet. Stir to fully combine ingredients.
  • Bring to a low boil Add 1/4 of an onion, finely chopped
  • Add 1/2 of a red bell pepper, finely chopped. Stir to fully coat with the sauce
  • Add meatballs and stir to fully coat the meatballs. Let simmer on low until heated through

TO SERVE

  • Serve meatballs and sauce over low carb pasta, veggie noodles, or quinoa
