Servings: 4 servings
Ingredients
- 1 TBS olive oil
- 2 1/2 cups chopped mixed vegetables of choice, adjust to desired amount I used jicama, celery, carrots and red onion
- 29 oz beef broth (3 1/2 cups), adjust to desired amount
- 14.5 oz canned diced tomatoes, undrained
- 1 lb chopped steak, cooked
- 1 1/2 TBS dry seasonings of choice I used thyme, oregano, basil, onion powder and garlic powder
- salt and pepper to taste
Instructions
- Place oil in a 5-quart saucepan over medium heat. Preheat the oil over medium heat 3 to 5 minutes or until warm. Add the vegetables and cook stirring occasionally 3 to 5 minutes or until softened
- Add the remaining ingredients and stir to combine. Bring to a low boil. Cover, reduce heat to low and simmer at least 20 minutes or until the vegetables are tender.
- Ladle desired amount in serving bowl. Serve warm. For leftovers, cool them completely and store in an airtight container in the refrigerator up to 3 days
I tried to find the beef in the recipe for beef stew, but I could not. I think the picture shows beef. Is this a vegetarian recipe? Thanks.

Oops I guess it can’t be called beef stew if the beef is not listed lol. It’s listed now. 🙂 It should be 1 lb. of chopped cooked steak or beef of choice.
