Simple Keto Coconut Flour Chocolate Layer Cake (Nut Free And Gluten Free)

Ingredients

  • 3/4 cup coconut flour
  • 1 1/2 TBS baking powder
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 1 cup monkfruit sweetener or granulated sweetener of choice
  • 6 TBS cocoa powder
  • 4 larg eggs, room temperature
  • 3/4 cup room temperature butter, softened
  • 1 cup milk, room temperature
  • 1 1/2 tsp vanilla extract
  • 1 batch my chocolate buttercream frosting or frosting of choice

Instructions

  • Preheat oven to 350 degrees. Line two 8 inch round cake pans with parchment paper
  • In a large mixer bowl sift or whisk the dry ingredient together until there are no lumps in the dry ingredients
  • Add the eggs. Beat on low 10 seconds to moisten the dry ingredients. Increase speed to medium-low. Beat on medium-low about 30 seconds or until fully combined
  • Add the butter, Beat on low 10 seconds or until the butter begins to break up. Increase speed to medium. Beat on medium about 30 seconds or until combined and smooth
  • Scrape down the sides of the bowl and push everything to the center of the bowl. Add the milk and the vanilla extract. Beat on low 10 seconds just until the milk begins to combine. Increase speed to medium. Beat on medium until fully combined and a smooth batter has formed
  • Dived the batter evenly between the prepared cake pans (about 2 cups of batter in each cake pan) Use a spatula and smooth the top of the cake to make sure the tops are flat
  • Place in the preheated oven. Bake at 350 for 25-30 minutes or until a tester comes out clean.
  • Remove from the oven. Allow to cool in the pans about 1 hour or until firm enough to remove
  • Carefully remove from the pans. Transfer to a wire rack and cool completely before assembling and frosting
  • Once cakes are completely cooled Place one cake onto large serving platter. Spread about 3/4 cup of frosting or filling of choice on top of the cake. Leave room around the edges so the filling does not push out the sides. Make sure the filling is even and smooth
  • Place the second cake evenly onto the top of the filling Press slightly to seal with the filling. Spread about 1 1/2 cups of the frosting evenly over the top of the cake. Use the remaining frosting to frost the sides of the cake. Decorate as desired. Eat immediately or store in an airtight container, in the refrigerator for up to 5 days
