Ingredients
- 30 grams coconut flour (1/4 cup)
- 7 grams baking powder
- 1/4 tsp salt
- 64 grams granulated sweetener of choice (1/3 cup) I used granulated monkfruit sweetener
- 10 grams cocoa powder (2 TBS)
- 2 large room temperature eggs
- 55 grams butter, melted and cooled (1/4 cup)
- 60 ml slightly warm milk (1/4 cup)
- 2 grams vanilla extract
Instructions
- Preheat oven to 350 degrees. Line an 8 x 4 inch loaf pan with parchment paper. Allow the paper to hang over the sides of the pan for easy removal. Sift the dry ingredients into a large mixing bowl until there are no lumps. Stir in the eggs, butter, milk and vanilla until fully combined and smooth.
- Pour mixture into the prepare loaf pan. Place into preheated oven and bake at 350 degrees for 25 to 30 minutes or until firm and a tester comes out clean. Remove from the oven. Allow to cool in the pan at least 30 minutes to firm up. Remove from the pan and transfer to a wire rack, Allow to cool completely before slicing. If desired dust with powdered sweetener before serving
