Ingredients

  • 14 grams flaxseed meal (2 TBS)
  • 90 ml room temperature water (6 TBS)
  • 28 grams coconut flour (1/4 cup)
  • 50 grams oat fiber (1/2 cup)
  • 1/4 tsp salt
  • 11 grams baking powder (1 TBS)
  • 5 grams instant dry yeast (1/2 TBS)
  • 2 tsp garlic powder
  • 1 tsp dry Italian seasoning
  • 3 large room temperature eggs
  • 60 grams plain Greek yogurt or sour cream (1/4 cup)
  • 1/2 cup butter, melted and cooled
  • 56 grams shredded mozzarella cheese (1/2 cup)

Garlic Butter Topping

  • 1/2 cup softened butter
  • 1 tsp garlic powder
  • 1 tsp dry Italian seasonings

Instructions

  • Preheat oven to 400 degrees. Line an 8 x 8 inch cake pan with parchment paper. Allow the paper to hang over the sides of the pan for easy removal. Set aside. In a small bowl use a fork and stir the flaxseed meal and water together until fully combined. Set aside and allow to absorb for at least 15 minutes or until thickened and gooey.
  • Sift the dry ingredients into a large mixing bowl until there are no lumps in the dry ingredients. Stir the wet ingredients including the thickened flax seed meal until a very wet sticky dough forms. Scrape down the sides of the bowl and allow the dough to sit uncovered at room temperature for 10 minutes to absorb some of the moisture.
  • After 10 minutes the dough will still be wet but should have absorbed some of the mixture. Gradually fold in the mozzarella cheese until fully combined. Spread the dough evenly throughout the prepared cake pan. Place in the preheated oven. Bake at 400 degrees for 20 to 25 minutes or until golden and a tester comes out clean.
  • Once baked remove the bread from the oven. Allow to cool in the pan 15 to 20 minutes until firm. Once firm grasp the overhanging parchment paper and carefully lift the bread out of the pan. transfer the bread to a wire rack and allow to cool completely before slicing.
  • Keep oven preheated to 400 degrees. Combine the garlic butter ingredients in a small bowl. Use a fork and stir to fully combine. Spread the garlic butter evenly over the cooled bread. Cut the bread into 8 to 10 sticks. Place the sticks on a lined baking sheet.
  • Place the sticks into the preheated oven. Bake at 400 degrees for 3 to 5 minutes or until golden and slightly toasted. Remove allow to cool a couple of minutes to avoid burning fingers. Serve warm.
