This recipe is designed to teach everyone how to make the easiest coconut flour blondies. These blondies are low carb, keto friendly, nut free, gluten free, sugar free and diabetic friendly

Ingredients
- 84 grams coconut flour (3/4 cup)
- 2 tsp baking powder
- 130 grams golden monkfruit sweetener (2/3 cup)
- 4 large eggs, room temperature
- 1/2 cup room temperature butter, softened
- 1/4 cup plain yogurt or sour cream, room temperature
- 2 tsp vanilla extract
- 80 grams keto white chocolate chips or add-in of choice, optional (1/2 cup)
Instructions
- Preheat oven to 350 degrees. Line 8 x 8 inch cake pan with parchment paper. Allow the paper to hang over the sides slightly for easy removal
- In a large mixer bowl sift the dry ingredients together until there are no lumps
- Stir the eggs in until all the dry ingredients have been moistened. Add the butter and stir until fully combined
- Stir in the yogurt and vanilla until fully combined and smooth. Form dough into a ball. Roll ball around to make sure of the texture Gradually fold in the white chips (if using) until evenly distributed throughout the dough
- Pour batter into the prepared cake pan. Use a spatula and spread the batter evenly throughout the cake pan
- Bake in preheated oven at 350 degrees for 20-25 minutes or until a tester comes out clean. Remove from the oven and allow to cool in the pan about 1 hour or until firm
- Grasp paper "handles" and carefully lift the blondie slab and transfer to a wire rack. Allow to cool completely before slicing. Store leftovers in an airtight container at room temperature up to 1 week

I follow Janet on YouTube. All of her recipes I’ve made have been delicious. I made 1/2 of Janet’s Keto Blondies recipe and it was great. I think the coconut flour is a better choice for the flavors of the Blondies. This is my new favorite desserts, Thank u Janet!!

These are the best Blondies I’ve ever ate. I like these better than high carb Blondies. I’ve made more than once. I put them in the frig after I’ve made them. I’m the only person in my family eating low carb. Janet, I have tried a lot of ur recipes and follow u on YouTube. Everything I’ve made out of ur recipes are delicious!!
