The Easiest Keto Meringue Cookies

3 Ingredient Keto Meringue Cookies

  • 84 grams granulated sweetener of choice (7 TBS) I use granulated monkfruit sweetener
  • 24 grams egg white protein powder (3 TBS)
  • 83 ml room temperature water (6 TBS)
  • 1/2 tsp vanilla extract or extract flavor of choice, optional


  • Preheat oven to 225 degrees. Line 2 large baking sheets with parchment paper. Place the sweetener and egg white powder into a large mixer bowl. Whisk together until fully combined and there are no lumps
  • Attach the whisk attachment to the mixer and turn mixer onto low speed. Gradually add in the water and extract (if using). Allow the water to fully beat in after each addition.
  • Once fully added gradually increase the speed to medium-high. Beat on medium-high 5 to 8 minutes or until stiff peaks form. Fit a piping bag with the size tip that is desired
  • Fill the bag with the meringue and pipe the meringue out onto the prepared baking sheets. If no piping bag spoon the meringue out 1 to 2 tablespoons out at a time. Make sure to leave space in between each cookie for even baking
  • Place the cookies into the preheated oven. Bake at 225 degrees for 1 hour or until firm. Turn the oven off. DO NOT OPEN THE DOOR. Allow the cookies to dry in the warm oven for another hour or until fully dry
  • Remove from the oven and transfer to a wire rack. Make sure cookies are completely cool and dry before serving
