Ingredients
- 60 grams coconut flour
- 5 TBS room temperature butter, or coconut oil for dairy free
- 50 grams keto syrup of choice I used Choczero caramel syrup
- extract and dry spices of choice, optional
- desired amount of berries I used 1/3cup blueberries
- toppings of choice, optional
Instructions
- Line a 9×5 inch loaf pan with parchment paper. Set aside
- Pulse coconut flour and butter a few times in a large food processor until butter begins to break up. Process about 30 seconds or until combined
- Scrape down the sides of the processor bowl. Add the syrup and optional extract and spices if using.
- Scrape down the sides of the bowl and scatter in the berries. Pulse a few times to break up the fruit. Process about 30 seconds or until the fruit is desired consistency
- Scrape down the sides of the bowl. Form dough into a ball. Massage the dough for 30 seconds to make sure of texture
- Form dough back into a ball and press evenly throughout the prepared pan. Cut into desired size bars. Sprinkle with optional toppings if using
- Place into freezer. Freeze at least 30 minutes or until firm. Remove eat immediately. Store leftovers in an airtight container in the freezer up to 1 week
