5 Minute Keto Snickerdoodles

Ingredients

  • 1/2 cup very soft butter
  • 25 grams granulated sweetener, adjust to taste (2 TBS) I use granulated monkfruit sweetener
  • 25 grams brown sugar sweetener (2 TBS) I use brown monkfruit sweetener
  • 2 large room temperature eggs
  • 1 tsp vanilla extract, adjust to taste
  • 5 grams baking powder (1 tsp)
  • 1/4 tsp salt
  • 1 tsp ground cinnamon, adjust to taste
  • 1 tsp ground nutmeg, adjust to taste
  • 56 grams coconut flour (1/2 cup)

Coating

  • 25 grams granulated sweetener (2 TBS)
  • 25 grams brown sugar sweetener (2 TBS)
  • 1 tsp ground cinnamon, adjust to taste

Instructions

  • Preheat an air fryer to 325 degrees for at least 5 minutes. If no air fryer preheat an oven to 350 degrees and line a large baking sheet with parchment paper. Beat the butter and sweeteners in a large bowl on medium-high heat for 3 minutes or until smooth and creamy.
  • Scrape down the sides of the bowl. Beat the eggs and vanilla on medium-high about 30 seconds or until fully combined. Turn mixer on low. Gradually add the dry ingredients to the wet ingredients. Allow the ingredients to mix in after each addition. Stop the mixer and scrape the sides pf the bowl as needed.
  • Form dough into a ball and test the dough to make sure it holds its shape. The dough will be very moist but should not be sticking to fingers. In a wide bowl whisk together the coating ingredients until fully combined and there are no lumps.
  • Line a clean worksurface with parchment paper. Scoop the dough out 1 tablespoon at a time onto the worksurface. Roll each scoop into a smooth ball and very slightly flatten the tops of the dough balls. (do not flatten a lot) Place shaped cookies one at a time into the coating.
  • Turn to fully coat the cookies. Line the preheated air fryer with parchment paper or silicone mat. (DO NOT EVER PUT LOOSE PAPER IN THE AIR FRYER WHILE IT IS PREHEATING) Place the cookies in the preheated air fryer. Leave about 1 inch of space between each cookie.
  • Air fry at 325 degrees for 5 to 7 minutes or until golden. If baking, bake at 350 degrees for 10 to 12 minutes or until golden. Open air fryer. Cookies will be very soft so do not touch them. Allow the cookies to sit in the air fryer at least 5 minute or until form enough to remove without falling apart.
  • Remove from air fryer and transfer to a wire rack. Allow the cookies to cool completely before serving. The cookies will continue to firm up as they cool.
