Ingredients
- 1 TBS olive oil
- 1 TBS apple cider vinegar
- 1 TBS mayonnaise or plain yogurt
- 1/4 tsp garlic powder
- 1/8 tsp pepper
- 1/8 tsp dry dill weed
- 1/4 tsp salt
- 1/2 tsp granulated sweetener of choice I used granulated monkfruit sweetener
- 1/2 small squash, cut into thin strips
- 1/2 small zucchini, cut into thin strips
- 1/4 small red onion, cut into thin strips
- 3 mini sweet peppers, cut into thin strips
Instructions
- In medium mixing bowl stir together the oil, apple cider vinegar and mayonnaise until fully combined. Add all the vegetables and stir until the vegetables are coated with the dressing. Cover and place in the refrigerator for at least 30 minutes before serving. Store leftovers in the refrigerator up to 3 days.
