7 Minute Keto Crunch Wrap

This recipe is designed to teach everyone how to make 7-minute keto crunch wraps.

Ingredients

  • 1 12 inch keto tortilla
  • 4 TBS sour cream, divided
  • 6 TBS shredded cheddar cheese, divided
  • 1/4 cup broken keto tortilla chips
  • 1/4 cup cooked shredded chicken or cooked meat of choice
  • 2 TBS torn baby spinach, divided
  • 1 TBS keto salsa
  • 2 TBS keto refried bean substitute or taco filling of choice
  • optional guacamole or dipping sauce of choice

Instructions

  • Preheat an air fryer to 375 degrees. If no air fryer, preheat some oil in a large skillet over medium heat 3 to 5 minutes or until it is warm. Place the tortilla on a clean cutting surface. Use a pizza cutter and cut the tortilla into 4 sections leaving the sections attached at the middle of the tortilla (see video)
  • Scoop 1 TBS of the sour cream onto each of the sections and spread the sour cream evenly over each section. Sprinkle 1 TBS of the cheese over the sour cream in each section. Pile the broken chips into the top left section of the tortilla. Pile the meat into the lower left section of the tortilla.
  • Pile the baby spinach into the top right section of the tortilla and drizzle the salsa over the spinach. Spread the refried bean substitute evenly over the bottom right section of the tortilla. Sprinkle the remaining shredded cheese evenly over the filling.
  • To fold the crunch wrap: Take the bottom left portion and fold it up over the upper left portion. Fold the layers over the top right section then fold over the lower right section. The wrap should look like a triangle when done (see video) Line the preheated air fryer with a silicone mat or parchment paper (NEVER PUT LOOSE PARCHMENT PAPER IN THE AIR FRYER)
  • Lightly grease the mat or paper with olive oil. Lightly brush the wrap on all sides with olive oil or cooking spray. Place the crunch wrap in the air fryer and air fry at 375 degrees for 5 to 7 minutes or until crisp. If using a skillet fry in hot oil 2 to 3 minutes on each side or until crisp.
  • Open fryer and let sit in the fryer basket for 5 minutes to continue to crisp up. If using a skillet place the cooked wrap onto a paper towel lined plate to drain any excess oil. Serve warm with the dip of choice. Repeat the whole process until you have the desired amount of crunch wraps.
