Ingredients
- 14 grams coconut flour (2 TBS)
- 24 grams granulated sweetener of choice (2 TBS), adjust to taste I use granulated monkfruit sweetener
- 2 grams baking powder (1/2 tsp)
- 1/4 tsp ground cinnamon. adjust to taste
- 1/4 tsp ground nutmeg, adjust to taste
- 1/4 tsp ground allspice, adjust to taste
- 1 large room temperature egg
- 30 ml room temperature milk of choice (2 TBS)
- 14 grams oil of choice (1 TBS)
- 2 grams vanilla extract, adjust to taste (1/2 tsp)
Instructions
- Place dry ingredients into a 12 oz microwave safe mug. Use a fork and stir the dry ingredients together until there are no lumps. This cake rises and falls while it cooks so make sure your mug is big enough or place your mug on a microwave safe paper plate to avoid overflow
- Stir the egg, milk, oil and extract in until fully combined and thick. Microwave on high 90 seconds or until the top is set and a tester comes out clean. Times can vary depending on the size of mug and wattage of microwave
- Remove from the microwave and allow to sit 5 minutes before serving. Serve warm of cool to room temperature and top with whipped cream or frosting of choice.
