Ingredients
Filling
- 12 oz blueberries (2 cup)
- 1/2 TBS lemon juice
- 1/2 tsp vanilla extract
- 30 grams granulated sweetener (2 1/2 TBS)
- 2 grams xanthan gum (1/2 tsp)
Topping
- 30 grams coconut flour (1/4 cup)
- 24 grams granulated sweetener (2 TBS)
- 1/4 tsp salt
- 1/4 tsp baking powder
- dry spices of choice, optional
- 2 large eggs, room temperature
- 1/4 cup butter, melted and cooled
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 400 degrees. Line an 8 x 4 inch loaf pan with parchment paper and allow the paper to hang over the sides for easy lifting once the cobbler is baked. Set aside
- In a medium mixing bowl combine all of the filling ingredients until fully combined and the berries are lightly coated. Set aside
- In a large mixing bowl sift together the dry topping ingredients until there are no lumps. Stir in the eggs, butter and vanilla until fully combined and a smooth dough has formed. Set aside
- Pour filling ingredients into the prepared loaf pan and distribute evenly throughout the pan
- Scoop the topping out by tablespoonfuls and drop over the filling. Use a fork or fingers and spread the topping evenly over the filling
- Place into preheated oven. Bake at 400 degrees for 25 to 30 minutes or until golden on top
- Remove from the oven. Allow to rest in the pan about 20 minutes so the ingredients can set in
- Cut desired slice. Serve immediately. Store leftovers in an airtight container at room temperature up to 3 days
