Ingredients
- 158 grams medium cucumber (about 1/2 of a medium cucumber)
- 255 grams plain Greek Yogurt (1 cup)
- 8 ml lemon juice (1/2 TBS)
- 8 ml olive oil (1/2 TBS)
- 1 TBS dry Italian seasoning or dry seasonings of choice I use oregano, basil, and thyme)
- 1/4 tsp garlic powder
- 1/8 tsp pepper
- 1/4 tsp salt
Instructions
- Use the large holes of a box grater and coarsely grate the cucumber. Place the shredded cucumber onto paper towels. Wrap the cucumber in the paper towels and squeeze tightly to release as much water as possible. Place the squeezed cucumber in a medium bowl.
- Add all the other of the ingredients. Use a fork and stir everything together until fully combined. Cover the bowl and chill for at least 30 minutes before using.
