Ingredients

  • 8 10 inch keto soft tortillas
  • 1/4 cup melted butter
  • 7 grams (1 tsp) coconut flour
  • 480 grams chicken broth (2 cups)
  • 240 grams room temperature sour cream (8 oz)
  • 1/2 tsp chili powder (adjust to taste)
  • 1/2 tsp xanthan gum
  • 1 lb cooked, shredded chicken
  • 1 TBS dry taco seasonings
  • 8 oz shredded cheese, divided

Instructions

  • Preheat oven to 350 degrees. Lightly grease a 3-quart casserole dish. In medium pan over medium heat combine the butter and coconut flour. Whisk constantly until fully combined and the butter is melted. Whisk in the broth, sour cream, chili powder and xanthan gum until fully combined and smooth. Do not let mixture come to a boil.
  • Remove the sauce from the heat. If needed adjust the thickness of the sauce by adding very small amounts of xanthan gum or the thickener of choice until the sauce reaches the desired consistency. The sauce will continue to thicken as it cools. Set aside.
  • In separate bowl the chicken, taco seasoning 4 oz of the shredded cheese 3/4 cup of the sour cream mixture, salt and pepper to taste. Stir until fully combined Divide chicken mixture evenly between the tortillas. Roll the tortilla around the filling and place rolled enchilada seam side down into the prepared casserole dish
  • Spoon remaining sauce over tops of the enchiladas. Sprinkle the remaining 4 oz of shredded cheese over the sauce. Place the enchiladas in the preheated oven. Bake for 20 minutes or until bubbly and the cheese is fully melted. Once baked Remove the enchiladas from the oven. Let stand at least 5 minutes before serving.
