Equipment
- slow cooker/ crockpot
Ingredients
- 2 lbs beef sirloin or meat of choice, sliced into strips
- 1/4 medium onion, sliced into strips
- 1 medium red bell pepper, sliced into strips
- 1 medium jalepeno, finely chopped
- 15 oz can black soy beans or bean substitute of choice
- salt and pepper to taste
- 15 oz can diced tomato, not drained
- 1 TBS dry cilantro
- 1/2 tsp garlic powder
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp ground coriander seed

- cheese, sour cream, favorite taco toppings
Instructions
- Place sliced meat, onion, bell pepper, jalepeno, and beans into a large Ziploc freezer bag. If not using right away you can refrigerate it for up to 3 days or freeze it until ready to use
- When ready to make the fajitas place all ingredients into a 5 quart crockpot.
- Season lightly with salt and pepper to taste. Stir to distribute salt and pepper throughout meat mixture
- In a small bowl combine tomatoes, cilantro, garlic powder, chili powder, ground cumin, and ground coriander seed. Stir to fully combine.
- Pour tomato mixture over meat mixture and stir to combine. Cover and cook on low 8-10 hours or on high 4-5 hours
- Place desired amount cooked meat mixture in center of tortilla. Top with cheese, sour cream, guacamole or any favorite taco toppings. Serve warm
