Ingredients
- 1 lb ground beef or ground meat of choice
- 1/4 cup keto ketchup (see recipe)
- 1 large egg
- 1/4 cup dry low carb bread crumbs or almond meal
- 1/2 tsp dry oregano
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/8 tsp black pepper
2 Minute Keto Ketchup
- 6 oz tomato paste
- 2 TBS apple cider vinegar
- 1/8 tsp pepper
- 1 TBS monkfruit sweetener or sweetener of choice
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 TBS water (more or less depending on how thick you want your ketchup)
Instructions
- Preheat oven to 350 degrees. In a large bowl combine ground beef, keto ketchup, and egg. Stir to fully combine
- Add dry oregano, onion powder, garlic powder, salt, pepper and dry low carb bread crumbs. Stir to fully distribute seasonings and bread crumbs.
- Spoon mixture into an 8 x 4 inch loaf pan. Use a spatula or spoon and spread meat mixture evenly throughout the pan.
- Use fingers or the back of a large spoon and firmly press the meat mixture into the pan.
- Bake at 350 for 30 minutes, Spoon 3 more tablespoons of the keto ketchup over the top of the meatloaf. Bake for 10-15 minutes more or until the internal temperature reaches 160 degrees. Let stand for 5 minutes before serving
- Recipe can be doubled and baked in a 9 x 5 inch loaf pan.
Keto Ketchup
- In a small bowl whisk together tomato paste and apple cider vinegar until smooth
- Add pepper, monkfruit, salt, garlic powder, onion powder and water. Stir until smooth
- Stir in water 1/2 TBS at a time until ketchup is your desired consistency.
- Spoon into a mason jar or airtight container. Store in refrigerator up to 1 week.
