How To Make Sugar Free/Keto Sweetened Condensed Milk 4 Different Ways

No Cook Sugar Free/Keto Sweetened Condensed Milk

Ingredients

  • 4 oz (1/2 cup) room temperature water
  • 1/4 cup butter
  • 1 tsp vanilla extract
  • 125 grams (1 cup) dry powdered milk of choice my favorite keto dry milk is powdered coconut milk
  • 192 grams (1 cup) allulose see notes about using sweeteners other than allulose

Instructions

  • Place the water and butter in a microwave safe mug/bowl. Microwave on high 1 to 1 1/2 minutes or until the butter is almost melted. Use a fork and stir until the butter is fully melted and smooth. Pour the mixture into a large blender. Add the vanilla extract.
  • Scoop in half of the powdered milk. Pulse is 10 second intervals 3 to 4 times to combine. Add the remaining powdered milk and pulse in 10 second intervals another 3 to 4 times or until combined. Add half of the allulose. Pulse in 10 second intervals another 3 to 4 times until combined.
  • Add the remaining allulose. Pulse in 10 second intervals another 3 to 4 times until fully combined. Scrape down the sides of the blender jar. Blend another 20 to 30 seconds or until thick, smooth and creamy. Spoon the sweetened condensed milk into an airtight jar /container. Store in the refrigerator for up to 2 weeks. Use in coffee, tea or in any recipe that requires sweetened condensed milk.
  • If storing this for more than 1 day use a fork and stir the milk at least once a day to keep it smooth. This recipe makes 14 oz. which is the average size of one can of traditional sweetened condensed milk.

Notes

*Allulose is less sweet to the taste than sugar. If using a sweetener that is equivalent to sugar (such as monkfruit sweetener etc.) reduce the sweetener to 125 grams (2/3 cup). Also reduce the water to 3 oz (1/3 cup) and add more if needed once everything is combined. 

5 Minute Keto Condensed milk

Ingredients

  • 1 cup whole milk of full fat coconut milk
  • 2 cups powdered milk or powdered coconut milk
  • 1/4 cup monkfruit sweetener or granulated sweetener of choice if using this for an ice cream recipe use 1 cup Allulose
  • 4 TBS butter
  • 1 tsp vanilla extract

Instructions

  • In a medium saucepan over medium heat allow milk to almost come to a boil
  • Add monkfruit sweetener and stir 1 minute or until fully dissolved. About 1 minute
  • Add milk powder and whisk well for 1-2 minutes or until fully dissolved
  • Add butter and vanilla Reduce and stir constantly another 1-2 minutes or until the butter is fully melted and smooth. Allow mixture to almost come to a boil. NEVER ALLOW MIXTURE TO COME TO A COMPLETE BOIL
  • Remove from heat. Place a mesh strainer over a large heat safe bowl. Pour milk mixture through the strainer and tilt the strainer side to side to strain out any lumps from the milk powder
  • Let cool about 30 minutes or until mixture reaches room temperature. Milk thickens as it cools
  • Use immediately or pour into an airtight container. in the refrigerator for up to 2 weeks. Milk thickens more as it is refrigerator. If storing for more than 24 hours use a fork and stir the milk at least once daily. Use in any recipe that uses sweetened condensed milk

Notes

This recipe yields about 1 1/2c of keto condensed milk
The average can of tradition sweetened condensed milk equals about 1 1/3 cups
1 1/3 cups of this recipe contains about 63 grams of net carbs if using coconut milk and powdered coconut milk

Traditional Style Sugar Free/Keto Sweetened Condensed Milk

This is a diabetic and keto friendly version of sweetened condensed milk

Ingredients

  • 2 1/4 cups heavy whipping cream
  • 1/2 cup powdered Swerve
  • 1/4 cup butter
  • 1/4 tsp vanilla extract (optional)

Instructions

  • Mix together all ingredients in a 12 inch skillet or wide 5 quart stock pot. Gently whisk the ingredients until the butter completely melts. (i like to cut the butter into cubes to help it melt faster)
  • Bring to a boil over medium heat. Stir frequently.WATCH CAREFULLY to avoid scorching or overflow
  • Reduce heat to medium low
  • Simmer for 15- 20 minutes or until milk has reduced by 50 percent and is thickened. Make sure to stir frequently
  • Remove from heat.Stir in 1/4 tsp vanilla if you want a little more flavor to the milk. Let cool in the pan until room temperature . The milk will thicken more as it cools.
  • Pour cooled milk into a mason jar or an airtight container. Let cool completely before using or storing. Store in the refrigerator for up to 1 week.
  • If milk becomes solid and does not combine after being refrigerated rinse the jar with the lid on under hot water just to get the chill off. Remove the lid and microwave on high about 10 seconds or until the milk had become liquid and is smooth and thick. Stir with a fork to make sure the milk is completely smooth

Notes

This can be made up to 1 week in advanced, Make sure to let it cool completely before storing it in an airtight container. Store leftovers in the refrigerator and shake it up every day to avoid the milk and sweetener from separating
The recipe yields 1 1/2 cups. The entire recipe contains about 14 grams of net carbs

Microwave Keto Sweetened Condensed Milk

Ingredients

  • 1 cup milk of choice
  • 1 tsp vanilla extract
  • 1/2 cup granulated sweetener of choice
  • 1/2 tsp xanthan gum
  • 1 TBS butter

Instructions

  • Place milk, vanilla and sweetener in a microwave safe bowl. Use a fork and stir to combine.
  • Sprinkle in the xanthan gum in small amounts whisking while adding. Once the xanthan gum is fully added whisk for about 20 seconds or until fully dissolved and smooth
  • Microwave on high in 1 minute intervals until the mixture is thickened. (about 2 minutes)
  • Use a fork and stir in butter until fully melted and smooth. Allow to cool completely stirring occasionally as it cools. It will thicken more as it cools. Use immediately or store in an airtight container in the refrigerator about 5 days. If it thickens too much after refrigerated microwave 15-20 seconds until smooth and pourable

  • Hello! I am excited about making your keto ice cream. I wanted to know how easily your recipe scales to 4 quarts for one batch, and, can it be churned in a crank type ice cream maker. Thank you. Ed

    • Hello! This recipe yields about 1 1/2 quarts (3 pints) of ice cream so in order to scale this up to 4 quarts you would have to multiply all the ingredients by about 2 1/2. I don’t know that this recipe would work in an ice cream machine. Ice cream machines usually require different ratios of ingredients because of the way they churn the ice cream. They usually creates a lot of air in the cream over a longer period of time. This recipe is designed to whip quickly so if you use it in an ice cream machine it may whip too hard or create too many air pockets which will cause your ice cream to freeze solid.
