20 Minute Keto Mexi-Sandwiches

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1/2 cup salsa
  • 1 TBS tomato paste
  • 2 cups room temperature water
  • 2 TBS dry taco seasoning
  • 15 oz canned black soybeans, drained and rinsed, optional can be substituted for jalapenos or any add-ins of choice
  • 6 keto hamburger buns or bread of choice

Instructions

  • Preheat a large skillet over medium heat for 3 to 5 minutes or until hot. Crumble the ground beef into small pieces and place in the preheated skillet. Season the beef with desired amount of salt, pepper and dry seasonings of choice. Stir to combine the beef with the seasonings.
  • Cook the beef stirring frequently for 5 to 7 minutes or until no longer pink. Continue to chop the beef in small pieces while it cooks. Once cooked, drain off extra fat and return beef to the skillet. Add the salsa, tomato paste and water. Stir until combined and the paste is smooth. Stir the taco seasoning in until fully combined.
  • Bring the mixture to a low boil. Cover the skillet and reduce the heat to low. Simmer the filling for 15 minutes or until some of the liquid has been absorbed. After 15 minute, uncover the skillet and increse the heat to medium. Add the drained beans and cook another 5 minutes until heated through.
  • To assemble, place the desired amount of filling onto the bottom portion of the hamburger bun. If desired to the filling with shredded cheese, salsa, sour cream or any toppings of choice. Leave open-faced or top the filling with the top portion of the hamburger bun. Serve warm.
