Ingredients
- 56 grams (1/2 cup) coconut flour
- 10 grams (2 TBS) whole psyllium husk
- 237 ml (1 cup) HOT water
Instructions
- Whisk the coconut flour and husk together until there are no lumps. Stir the water into the dry ingredients for one minute until a moist, crumbly dough forms. Push the dough to the center of the bowl. Knead the dough in the bowl for 1 minute until it forms into a smooth ball. Allow the dough to sit for 5 minutes to absorb.
- Divide the dough into 4 equal portions. Roll each portion into a smooth ball. Place the portions one a t a time onto a piece of parchment paper. Cover with another piece of parchment paper. Roll each portion out to a thin 7-to-8-inch diameter circle. Preheat an 8-to-10-inch skillet over medium heat for 5 minutes until hot. Use the parchment paper to transfer the rolled dough portions one at a time into the preheated skillet
- Turn the paper dough side down into the skillet. Carefully remove the paper from the dough. Cook for 2 minutes or until the underside is spotted. Use a long spatula and turn the tortilla over. Cook another one to two minutes until both sides are spotted. Remove the tortilla from the skillet. Repeat the cooking process until all the tortillas are cooked.
