5 Minute Keto Spanish Rice or Pasta Substitute

Ingredients
- 7 oz Miracle rice or noodles or rice/pasta substitute of choice
- 1/2 tsp ground cumin
- 1/2 tsp chicken bouillon granules
- 1/2 tsp chili powder
- 1/4 cup chunky salsa
- 1/2 cup black soybeans, rinsed and drained
- 2 oz (1/4 cup) shredded cheese
Instructions
- Preheat a medium skillet over medium heat 3 to 5 minutes until warm. Rinse and drain the Miracle noodles/pasta. Place drained rice/pasta in the preheated skillet. Cooke 5 minutes until moist of the moisture is absorbed. Stir in the dry seasonings, salsa and soybeans until fully combined. Gradually stir in the shredded cheese until fully added.
- Stir constantly for 3 to 5 minutes or until fully combined and the cheese is fully melted. Remove from heat and serve immediately as a side or in any recipe that requires Spanish rice.
