Keto Chicken And Dumplings

Ingredients

  • 3-14.5 oz. cans broth of choice
  • 2 cups cooked shredded chicken or turkey
  • 2 cups cooked mixed vegetables
  • 1/2 tsp dry oregano
  • 1/2 tsp dry basil
  • 1/2 tsp dry thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper

Dumplings

  • 1/2 cup coconut flour
  • 1 TBS psyllium husk powder
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp dry thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 large eggs, room temperature
  • 1-3 TBS room temperature water more or less as needed

Instructions

  • In a 5 quart stockpot over medium heat stir together broth, chicken or turkey, vegetables, and seasonings until fully combined
  • Bring to a low boil over medium heat. While waiting for it to boil mix together the dumplings

Dumplings

  • In a medium mixing bowl whisk together the coconut flour, psyllium husk powder, baking powder, salt, thyme, garlic powder and onion powder until fully combined
  • Add the eggs and whisk together until a dough begins to form. Add the water 1 TBS at a time until the dough is smooth and can stick together
  • Massage the dough in hands to make sure all ingredients are sticking together and can be shape into a ball
  • Scoop dough out 1-2 TBS at a time and roll each scoop into a tight ball.
  • Check the soup. Once the soup is at a low boil add the dumplings and bring up to a low boil once a gain.
  • Reduce the heat to low. Cover and simmer around 20-30 minutes or until the dumplings are no longer doughy. Serve hot
