Ingredients
Bread
- 75 grams coconut flour (10 TBS)
- 1 TBS baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon, optional
- 4 large eggs, room temperature
- 1/4 cup oil of choice
- 1/4 cup plain Greek yogurt or sour cream
Coating
- 2 large eggs
- 2 TBS milk or cream of choice
- 1/4 cup granulated sweetener of choice
- 1 tsp ground cinnamon
- keto syrup or dip of choice
Instructions
Bread
- Preheat a large skillet over medium heat until warm
- In a large mixing bowl sift the dry ingredients together until there are no lumps
- Add the eggs and stir until fully combined. Add the oil and yogurt, Stir until fully combined and a moist dough has formed
- Form the dough into a ball and massage 1 minute to absorb the extra moisture. The dough will be very moist but not sticky. If the dough sticks to hands add a very small amount of coconut flour
- Line clean worksurface with parchment paper. Roll dough out to a rectangle that is about 1/2 inch thick. Cut the rectangle into strips about 1 inch thick. Keep parchment paper attached to bottom of strips to help support the dough
- Spray preheated skillet with cooking spray. Place sticks into preheated skillet by grasping the parchment paper and turning sticks one at a time in to the skillet. Keep sticks in a single layer and slightly spaced apart.
- Cover cook 1-2 minutes or until brown on the bottom. Turn. cover and cook another minute or until brown on both sides. Place on paper plate and set aside
Coating
- Place 2 TBS of butter in a large skillet and preheat over medium heat until the butter is melted. In a wide bowl whisk together the milk and eggs until fully combined. In a separate wide bowl stir together the sweetener and cinnamon until fully combined
- Place cooked sticks one at a time into the egg/milk mixture and turn to fully coat the stick. Place the coated sick into the sweetener/cinnamon mixture and turn until the stick is fully coated
- Place the coated sticks in the preheated skillet with the melted butter. Make sure sticks are in a single layer and slightly spaced apart Cook over medium heat 1-2 minutes or until brown. Turn cook another 1-2 minutes or until brown on both sides
- Serve warm with keto syrup or dip of choice
