Quick Keto Chocolate Avocado Donuts

Ingredients
- 1 large ripe avocado (about 227 grams)
- 21 grams (1/4 cup) cocoa powder
- 50 grams (1/4 cup) granulated sugar substitute with I use Lakanto's granulated monkfruit sweetener
- 2 large room temperature eggs
- 2 TBS butter, melted and cooled
- 1 tsp vanilla extract
- 5 grams (1 tsp) baking powder
Instructions
- Preheat oven to 350 degrees. Lightly grease 6 silicone donut cavities. (I recommend silicone for easy removal) Set aside. Place all the ingredients in a large food processor. Process 20 to 30 seconds or until completely smooth. Stop and scrape down the sides of the processor bowl as needed.
- Divide the batter evenly between the prepared donut cavities. Use a butter knife to spread the batter evenly and smoothly throughout the cavities. Place the donuts into the preheated oven. Bake at 350 degrees 17 to 20 minutes or until firm and a tester comes out clean.
- Remove from the oven. Allow the donuts to cool in the pan at least 30 minutes to firm up. Use a butter knife and loosen the edges of the donuts from the cavities. Remove the donuts from the cavities and transfer to a wire rack. Allow the donuts to cool completely before serving.
