Ingredients

Filling

  • 560 grams (4 cups) frozen mixed berries do not defrost
  • 15 ml (1 TBS) lemon juice
  • 48 grams (1/4 cup) granulated monk fruit sweetener
  • 2 grams (1/2 tsp) xanthan gum or unflavored gelatin powder

Topping

  • 63 grams (9 TBS) coconut flour
  • 48 grams (1/4 cup) granulated monk fruit sweetener
  • 1/4 tsp salt
  • 4 grams (1 tsp) baking powder
  • 2 large room temperature eggs
  • 1/2 cup butter, melted
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 400 degrees. Spread berries throughout an 8 x 8-inch cake pan. Drizzle the lemon juice over the berries. Sprinkle 1/4 cup of the monk fruit sweetener over the berries. Sprinkle the xanthan gum over the berry mixture. Stir everything together until fully combined and the xanthan gum is fully dissolved
  • Spread berry mixture evenly throughout the pan and set aside. Sift the dry topping ingredients into a large mixing bowl until combined and no lumps. Stir the wet ingredients into the dry ingredients until combined and a smooth dough has formed. Scoop the dough 1/2 TBS at a time over the berry filling
  • Use a fork or fingers and press the dough scoops together to spread the topping evenly over the filling. Place cobbler in the preheated oven. Bake for 25 to 30 minutes or until golden and the filling is bubbly around the edges. Once baked remove the cobbler from the oven. Allow it to sit in the pan at least 20 minutes before slicing. If desired top slices with keto whipped cream or keto vanilla ice cream
