  • 28 oz fresh or canned crushed tomatoes
  • 1 cup chicken broth or broth of choice
  • desired amount of fresh or dry basil
  • salt and pepper to taste
  • 1 tsp granulated sweetener of choice I use granulated monkfruit sweetener
  • 1 cup coconut milk or milk of choice
  • 1/4 cup butter
  • optional add-ins (meat, cheese etc)


  • Place the tomatoes, basil, salt, pepper and broth in a large pan over medium heat. bring to a low boil. Reduce the heat to medium-low. Cover the pan and allow to simmer 10 minutes. Add the sweetener, milk of choice and butter. Stir until the butter is fully melted. For a smoother texture pour soup into a heat safe blender and pulse until desired consistency. If desired add meat, cheese or add-ins of choice. Serve immediately.
