Quick Keto Glazed Layered Cupcakes

Ingredients

  • 120 grams  coconut flour (1 cup)
  • 1/4 tsp salt
  • 126 grams  granulated sweetener of choice (3/4 cup), adjust to taste
  • 15 grams  baking powder (1 TBS)
  • dry spices of choice, optional
  • 4 large  eggs, room temperature
  • 1/2 cup butter, melted and cooled
  • 120 grams room temperature plain yogurt or sour cream (1/2 cup)
  • 9 grams  vanilla extract (1 TBS), adjust to taste
  • 14 grams  cocoa powder (2TBS)
  • 29 ml room temperature milk of choice (2 TBS)

White Chocolate Glaze

  • 170 grams  keto white chocolate chips (1 cup)
  • 19 ml room temperature milk of choice 4tsp)
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees. Lightly spray 12 muffin cups. Set aside
  • Sift the dry ingredients into a large mixing bowl until there are no lumps.
  • Stir in the eggs, butter, yogurt and vanilla until fully combined and a smooth dough has formed
  • Form dough into a smooth ball and massage for a few seconds to make sure of the texture
  • Divide the dough into 2 equal portions and place into separate mixing bowls
  • Stir the cocoa and milk into one portion of the dough until fully combined
  • Scoop 1 1/2 TBS of chocolate dough into each muffin cup and press evenly throughout the bottom of the cup. Scoop 1 1/2 TBS of vanilla dough on top of the chocolate dough and press evenly over the chocolate dough
  • Place in preheated oven and bake at 350 degrees for 18 to 20 minutes or until golden and a tester comes out clean
  • Remove from the oven and allow to cool in the pan at least 30 minutes to firm up. Transfer to a wire rack and allow to cool completely before spreading on the glaze

White Chocolate Glaze

  • Place all glaze ingredients in a microwavesafe bowl. Microwave in 20 second intervals until the chips are fully melted
  • Use a fork and stir until smooth. If desired stir in food coloring of choice Place parchment paper under wire rack. Spoon glaze over cupcakes. Allow to sit 5 to 10 minutes for glaze to firm up
