Easy Keto Layered Popsicles

Ingredients

Red Layer

  • 71 grams (1/2 cup) strawberries if using frozen thaw before using
  • 36 ml (2 1/2 TBS) fresh keto lemonade
  • 35 grams (1 1/4 oz) vanilla Greek yogurt
  • 1 tsp granulated sugar substitute, adjust to taste I use granulated monkfruit sweetener
  • optional red food coloring

White Layer

  • 80 ml (1/3 cup) keto lemonade
  • 35 grams (1 1/4 oz) vanilla Greek yogurt
  • 1 tsp granulated sugar substitute, adjust to taste I use granulated monkfruit sweetener

Blue Layer

  • 35 grams (1/4 cup) blueberries
  • 36 ml (2 1/2 TBS) keto lemonade
  • 35 grams (1 1/4 oz) vanilla Greek yogurt
  • 1 tsp granulated sugar substitute, adjust to taste I use granulated monkfruit sweetener

Instructions

  • Place all the ingredients except food coloring for the red layer in a large food processor. Process until completely smooth. If using the food coloring blend, it in for about 30 seconds until fully distributed. Taste the mixture and adjust sweetness if needed (I used 1 1/2 tsp)
  • Divide the red layer between 5 popsicle molds (about 2 TBS in each mold) The number of popsicles will vary depending on the size of your molds. You're wanting to fill the molds 1/3 of the way up. Insert a popsicle stick into the red layer. Freeze the red layer for 2 hours or until fully solid.

White Layer

  • Thoroughly wash your processor. Place all the ingredient for the white layer into the processor bowl. Blend until mixture is completely smooth. Taste and adjust the sweetness if needed. Remove the frozen red layer from the freezer. Pour the white layer evenly over the red layer. Freeze for 2 more hours or until the white layer is solid.

Blue Layer

  • Thoroughly wash te food processor. Place all the ingredients except the food coloring for the blue layer into the processor bowl. Blend the ingredients until completely smooth. if using the food coloring blend, it in for another 30 seconds until the color is evenly distributed.
  • Remove the frozen popsicle from the freezer. Pour the blue layer evenly over the white layer. Freeze for 4 hours or until completely frozen. When ready to eat run the molds under warm water for a few seconds to loosen the popsicle from the mold.
