Ingredients
- 15 oz can diced tomatoes, undrained
- 1 tsp onion powder
- 29 oz chicken broth (4 cups)
- 1/2 tsp garlic powder
- 1 tsp dry cilantro or oregano
- 1 tsp chili powder
- 1/2 tsp black pepper
- 1/2 tsp ground cumin
- 15 oz can black soy beans, drained
- chopped onion, desired amount
- 2 cups shredded cooked chicken
- 1 batch 3 ingredient keto tortilla chips, formed into strips
Instructions
- Place all ingredients except beans, chopped onion, and chicken in a large blender and blend 1 minute or until pureed
- Pour soup base into 5 quart stockpot over medium-high heat. Add the beans, chopped onion and chicken. Bring to a low boil over medium-high heat. Decrease heat to low and simmer 20 minutes to infuse the flavors
- Remove from heat. Ladle desired amount of soup in serving bowl. Top with desired amount of tortilla strips and toppings of choice. Store leftovers in an airtight container in the refrigerator up to 1 week
