Ingredients

Meatballs

  • 1 lb lean ground sausage
  • 1 large egg
  • 1 TBS dry Italian seasoning
  • 30 grame (2 TBS) coconut milk
  • 60 grams (1/2 cup) freshly grated parmesan cheese,

Sauce

  • 452 grams (2 cups) full fat cottage cheese,
  • 1 1/2 tsp dry Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chicken bouillon granules
  • 1/4 tsp pepper
  • 60 grams (1/2 cup) freshly grated parmesan cheese,
  • 120 ml (1/2 cup) coconut milk
  • 16 oz fresh or frozen vegetables

Instructions

Meatballs

  • Preheat the oven to 400 degrees. Line a large baking sheet with a silicone baking mat or parchment paper. Stir all the meatball ingredients together except the parmesan until fully combined. Gradually stir the parmesan cheese into the meat mixture until fully combined and the mixture sticks together.
  • Scoop the meat mixture out 2 TBS at a time onto the prepared baking sheet. Roll each scoop into a tight ball. Leave space between the meatballs on the baking sheet. Bake in the preheated oven for 15 to 20 minutes until brown and the internal temperature is at least 160 degrees.

Sauce

  • Scoop the cottage cheese into a blender and blend until completely smooth. Scoop the blended cottage cheese into a large skillet over medium-low heat. Stir in the dry seasonings, bouillon granules and the pepper until fully combined. Gradually stir in the parmesan cheese until fully combined.
  • Continue to stir constantly for 2 to 3 minutes until the cheese is melted and the sauce is smooth. Gradually stir in the milk and vegetables until fully combined. Continue to stir constantly for 2 to 3 minutes until the vegetables are crisp-tender. Turn the sauce on low until the meatballs are done baking.

Assemble

  • Once the meatballs are done baking remove them from the oven and allow them to cool on the baking sheet 2 to 3 minutes. After the meatballs have set, transfer them to the sauce and stir until the meatballs are fully coated with the sauce. Stir constantly for another 2 to 3 minutes until the sauce and meatballs are heated through. Serve desired amount of sauce and meatballs over the cooked keto pasta of choice
