Easy Stuffed Keto Chicken Rolls

Ingredients

  • 1 1/2 lbs full boneless skinless chicken breast
  • salt and pepper to taste
  • 100 grams soft cream cheese (4 oz)
  • 100 grams shredded cheese of choice (1 cup) I used shredded mozzarella cheese
  • dry seasonings of choice I used garlic powder, onion powder and dry oregano
  • 3 medium tomato slice, each cut in half
  • 50 grams mayonnaise (3 1/2 TBS)
  • 20 grams keto mustard (1 TBS)
  • 200 grams shredded cheese of choice (2 cups) I used shredded mozzarella

Instructions

  • Preheat oven to 350 degrees. Lightly grease a 2 qt casserole dish with oil or cooking spray. Cut the chicken breast into 2 separate breasts. Slice each breast into 3 thin fillets to create 6 thin fillets. Use a sharp knife and each fillet with the knife all over to create very small cuts n the fillets/ Do not cut all the way through.
  • Sprinkle each fillet with salt and pepper to taste. Scoop about 1 TBS of cream cheese onto each fillet and spread the cream cheese into a thin layer over the top of the fillets. Sprinkle about 2 to 3 TBS of the 100 grams of cheese evenly over the cream cheese.
  • Sprinkle the dry seasonings of choice over the cheese. Make sure to leave a little space around the edge of each fillet to prevent the filling pushing out the sides once rolled. Place one or the half tomato slice toward the top portion of each fillet.
  • Grasp the top edge of the fillet. Roll the fillet over the tomato and roll over 1 more time to seal the filling into the roll. Place the rolled fillet seam side down int the prepared casserole dish. Repeat the filling and rolling process until all of the fillets are rolled and are side by side in the prepared casserole dish. Set aside
  • Whisk together the mayonnaise and the mustard until fully combined. Brush the mixture over the tops of the chicken rolls. Place in the preheated oven. Bake at 350 degrees for 30 minutes or until the chicken is cooked through. Once cooked remove the chicken rolls from the oven
  • Sprinkle the remaining 200 grams of shredded cheese evenly over the tops of the chicken rolls. Place the rolls back into the preheated oven. Bake at 350 degrees for 15 more minutes or until the cheese is fully melted. Once the cheese is melted remove the rolls from the oven and let sit in pan about 3 minutes to slightly cool.
  • Scoop the desired amount of chicken rolls onto the serving plate of choice. Serve warm. Serve these alone or with the side dishes of choice.
