Ingredients
- 1 lbs salmon fillets
- 2 TBS avocado oil or oil of choice
- 1/4 cup chicken broth or broth of choice
- 2 TBS lemon juice
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/4 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp dry tarragon
Instructions
- Preheat oven to 425 degrees. Lightly spray a 9 x 13 inch baking dish
- Place salmon into prepared baking dish and cut into 4 fillets. Brush salmon evenly with avocado oil
- In a small bowl combine broth, lemon juice, pepper, salt, onion powder, garlic powder, cayenne pepper, and dry tarragon. Use a fork and stir everything together until fully combined
- Pour broth mixture over salmon fillets. Bake at 425 degrees for 15-20 minutes or until fish flakes when cut with a fork
- Let sit in the baking dish about 5 minutes. Serve hot with sides or topped with strawberry salsa

Keto Sweet Strawberry Salsa

Ingredients
- 1/2 medium cucumber, chopped
- 1 pint strawberries, chopped
- salt and pepper
- 2 TBS keto maple syrup
- 1 TBS avocado oil
- 1 TBS lemon juice
- 2 TBS fresh cilantro, chopped
Instructions
- In a large mixing bowl gently stir the cucumber, strawberries, salt and pepper together until fully combined. Set aside. In a medium bowl whisk together the syrup, oil and lemon juice until fully combined. Drizzle 2 TBS of the dressing over the cucumber/strawberry mixture. Set remaining dressing a side to use when serving. Stir to fully coat the cucumbers and strawberries with the dressing.
- Sprinkle the cilantro evenly over the top of the salsa. Serve immediately over baked chicken, salmon, tacos or green salad. Drizzle desired amount of extra dressing over the salsa when serving.
Notes
Tip: The smaller the cucumber and strawberries are chopped the more of a wet texture the salsa will have
Flavor variations: Stir chopped jalapenos into the mixture for sweet and spicy. Stir in chopped nuts or seed for sweet and salty.
