Keto Cool Ranch Tortilla Chips

Ingredients

  • 56 grams (1/2 cup) golden flaxseed meal
  • 4 tsp dry ranch seasoning, divided
  • 3/4 tsp garlic powder, divided
  • 3/4 tsp paprika, divided
  • 3/4 tsp onion powder, divided
  • 1/2 tsp salt, divided
  • 59 ml (1/4 cup) boiling water

Instructions

  • Whisk together the flaxseed meal, 1 TBS ranch seasoning, 1/2 tsp garlic powder, 1/2 tsp paprika, 1/2 tsp onion powder, and 1/4 tsp salt until combined and no lumps. Stir in the boiling water. Continue stirring or 1 minute or until a dough forms. Allow the dough to sit and absorb for 15 minutes
  • Knead the dough in hands until smooth. Line a clean worksurface with parchment paper. Place the dough onto the worksurface. Divide the dough into 2 portions. Cover the dough with another piece of parchment paper. Roll the dough out into 2 thin circles that are about 7 to 8 inches in diameter.
  • Use a pizza cutter and cut each circle into 8 triangles. trim down the tortillas as need. Re-roll the excess dough and cut into more triangles. Preheat an air fryer to 360 degrees for 3 minutes. Lightly grease the air fryer basket. Place the chips in a single layer in the air fryer basket. Leave space between each chip. Lightly spray the chips with olive oil.
  • Air fry for 2 minutes. Open the air fryer and shake the basket. Close the air fryer and continue to cook in 2 minutes intervals until the chips are crisp (about 6 minutes total) Once the chips are done cooking, open the air fryer basket. Let the chips sit in the basket for 5 minutes.
  • Combine the remaining ranch and dry seasoning in a large Ziploc bag. Shake the bag to combine the seasonings. Place the chips in the bag. Seal the bag and turn it several times to fully coat the chips with the seasonings. Once coated place the chips on a wire rack and allow to sit for 1 hour to fully crisp up.
