Ingredients

  • 84 grams coconut flour (3/4 cup)
  • 15 grams baking powder (1 TBS)
  • 1/4 tsp salt
  • 2 tsp ground cinnamon or dry spices of choice
  • 4 large room temperature eggs
  • 10 grams Greek yogurt or sour cream (1/2 cup)
  • 160 grams keto maple syrup (1/2 cup) I use Choczero maple flavored syrup
  • 60 ml coconut oil melted and cooled or oil of choice (1/4cup)
  • 1 tsp vanilla extract
  • 150 grams shredded zucchini (1 1/2 cup)

Instructions

  • Preheat an air fryer to 325 degrees for at least 5 minutes. If no air fryer preheat an oven to 350 degrees. Lightly grease a 6-inch round cake pan or a 9 by 5-inch loaf pan. Set aside. Sift the dry ingredients into a large standing mixer bowl. If no standing mixer use a hand mixer or a wooden spoon. .
  • Beat in the wet ingredients on medium speed for about 1 minute or until a smooth batter forms. Gradually fold in the shredded zucchini until it is evenly distributed throughout the batter. Pour the batter into the prepared cake pan and smooth the batter evenly througout the pan.
  • Air fry at 325 degrees for 30 to 35 minutes or until brown and a tester comes out clean. If using the oven bake at 350 degrees for 50 to 60 minutes or until golden and a tester comes out clean. Open the air fryer or the oven and allow the bread to sit 5 minutes.
  • Remove from the fryer and transfer to a wire rack. Allow the bread to sit in the pan for at least 30 minutes or until firm and easily removes from the pan. Once firm remove the bread from the pan. Allow to cool completely before slicing. For best taste and texture lightly toast the slices on the stovetop before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or place in a freezer safe container and free up to 3 months.
  • To toast on the stovetop: Place a VERY SMALL amount of butter into a skillet over medium heat. Allow the butter to melt then toast the slices one minute on each side.
