Ingredients
- 8 oz (1 1/4 cups) keto white chocolate chips
- 15 grams (1 TBS) solid coconut oil
- 1 cup butter, softened
- 2 tsp vanilla extract
- 125 grams (1 cup) powdered monk fruit/allulose blend
Instructions
- Melt and stir the white chips and the oil together until fully melted and smooth. Beat the butter in a large mixer bowl on medium for 2 minutes until creamy. Reduce the mixer speed to medium low and gradually add the melted chips. Beat until fully combined. Stop and scrape down the sides of the mixer bowl as needed.
- Reduce the speed of the mixer to low and add the vanilla extract. Gradually add the powdered monk fruit/allulose blend. Once fully added, increase the mixer speed to medium. Beat on medium for 2 minutes or until smooth and fluffy. Spread frosting on cooled cakes or cupcakes. This makes enough frosting for one 9 x 9-inch cake.
