Ingredients
- 4 large eggs
- 125 grams (1/2 cup) cottage cheese,
- 1 oz (1/4 cup) shredded cheddar cheese
- 1/4 tsp salt
- 1/8 tsp pepper
- dry parsley, crumbled bacon, finely chopped bell peppers or toppings of choice, optional
Instructions
- Preheat the oven to 350 degrees. Lightly grease 9 silicone muffin cups then set them aside. Place all the ingredients except toppings into a medium blender. Blend on high 30 seconds or until completely smooth. Divide the batter evenly between the prepared muffin cups. (about 3 TBS batter in each cup) If desired top the bites with the topping of choice.
- Place the bites in the preheated oven. Bake for 20 to 22 minutes or until firm. Once baked, remove the bites from the oven and allow to cool in the pan 3 to 5 minutes. They will deflate slightly as they cool. Once cooled remove from the pan and serve.

Ingredients
- 28 grams (1/4 cup) coconut flour
- 5 grams (1 tsp) baking powder
- 1/4 tsp salt
- 7 grams (1/2 TBS) granulated monk fruit sweetener
- 2 large room temperature eggs
- 15 ml (1 TBS) coconut oil, melted
- 60 grams (1/4 cup) room temperature Greek yogurt
- 60 ml room temperature coconut milk
- 1 tsp maple extract
- 1/2 lb cooked sausage, crumbled bacon, vegetables or add-ins of choice, optional
Instructions
- Preheat the oven to 400 degrees. Lightly grease 6 silicone muffin cups then set them aside. Sift the dry ingredients into a large bowl until combined and there are no lumps. Stir the wet ingredients into the dry ingredients until a smooth batter forms. Gradually stir in the add-ins of choice (if using) until fully combined.
- Divide the batter evenly between the prepared muffin cups (about 1/4 cup batter in each cup) Place the bites in the preheated oven. Bake for 20 to 25 minutes until golden and a tester comes out clean. Once baked, remove the bites from te oven and allow to cool in the pan 8 to 10 minutes until firm.
- Remove the cooled bites from the cups. Place on the serving plate of choice if desired top the bites with keto maple syrup or butter. Serve warm or at room temperature.
