Simple Shaped Keto Pasta

Ingredients

  • 90 grams (3/4 cup) coconut flour
  • 13 grams (4 tsp) xanthan gum of konjac powder (glucomannan)
  • 3 grams (1 tsp) unflavored gelatin powder
  • 1/4 tsp salt
  • optional dry seasonings for flavor
  • 2 large room temperature eggs
  • 6 cups water (for cooking)

Instructions

  • Sift the dry ingredients into a large mixing bowl until combined and there are no lumps in the dry ingredients. Stir the eggs into the dry ingredients until the dry ingredients are moist and a crumbly dough forms. Press the dough crumbles together and form the dough into a ball.
  • Knead the dough in the mixing bowl for about 1-minute until the dough is smooth. The dough will be very thick. Form the dough back into a ball. Line a clean worksurface with parchment paper. Lighty=ly dust the worksurface with coconut flour or oat fiber.
  • Place the dough ball onto the lined worksurface. Lightly sprinkle some coconut flour/oat fiber over the top of the dough. DO NOT USE A LOT OF EXTRA FLOUR. Cover the dough with another piece of parchment paper. Roll the dough out as thin as possible (about 1/16 inch thick)
  • Use pizza cutter or sharp knife and cut the dough into desired size pieces. See end of the recipe how to shape macaroni/penne noodles. Once pasta is shaped, place the pasta in a single layer on a lined baking sheet. Allow the pasta to dry 24 to 48 hours or until completely dry and hard.

Cook Pasta

  • Once pasta is fully dry, bring 6 cups of water to a full boil. Pour the pasta into the boiling water. Cook the pasta for 45 seconds to 1 minute. DO NOT OVERCOOK The pasta will float and lightly change in color when done. Should be softened but still firm.
  • Drain the pasta. Serve with the sauce of choice or use in any recipe that requires pasta.

Shape Macaroni or Penne Noodles

  • Once the pasta dough is rolled out VERY thin. Cut the dough into 1 x 1-inch squares. Place a toothpick or metal skewer diagonal in the center of each square. Roll the dough around the skewer so the corners of the square are overlapping each other. gently press the overlapping corners against the skewer or fingers to completely seal the pasta (see video) Cook as directed above.
